I did not mean to go so long without writing! But that is life! We’ve finally had a bit of a cold snap yesterday and because of it, I’ve been drinking lots of this:
Mmmmm….I LOVE cinnamon apple tea! I love the taste and smell of cinnamon PERIOD! I have two Wallflowers from Bath and Body Works, one in Cinnamon and Clove and one in Sweet Cinnamon Pumpkin. I love the smell AND taste of fall!
This is why I thought I would make a favorite recipe of mine today — Gingersnaps! But not just any old gingersnaps – these are nonfat and SO GOOD! The recipe is from David Lebovitz and can be found here.
These cookies are nonfat because they use applesauce and no butter or oil. Now, here’s the caveat. These cookies don’t necessarily SNAP because they’re not hard cookies like the gingersnaps you buy from the store. These are soft, but I like to think their flavor makes them snappy!
Did you know that molasses is high in calcium, iron, and minerals like copper, manganese, potassium and magnesium? According to a recipe analysis, each cookie contains 5% of the daily allowance for iron!

During my baking escapades, I had a light lunch of butternut squash soup and an apple. I had blueberry muffin “cupcakes” (iced with pb!) this morning for breakfast and it held me over for a long time!
For dinner, I made a longtime favorite – Brownie Stew and cornbread. All Brownie Stew is made of is vegetable soup and ground beef, except we add some spice and add 1/2 a packet of taco seasoning. So good!

Now I’m off to catch up on Life Unexpected, Gossip Girl, and Vampire Diaries. We kept ourselves busy this week seeing Wicked on Broadway (highly recommended!), the taping of last night’s Late Show with David Letterman (with Michael J. Fox!), and The 39 Steps off-Broadway (also highly recommended, especially for Hitchcock fans!). Anyway, seeing all those shows didn’t leave time for any tv – so it’s catch up time!
